Fuck it. Lemon dill salmon recipe.
Disclaimer: I do not measure when I'm cooking savory dishes
Ingredients:
1 large or 2 medium salmon filets
Veggies of your choice (I use 2 zucchini)
Olive oil
Lemon juice
Dill (I use dry but fresh works)
Onion powder (you can use an actual onion, I just don't like the texture)
Salt & pepper
Equipment:
1 sheet pan
Aluminum foil
A bowl
A knife
A cutting board
Food safe gloves (optional)
Meat thermometer (recommended but if you don't have one that's fine)
Instructions:
Preheat your oven to 425° F (218° C)
Cut your veggies into relatively thin slices, if I had to guess I'd say a little under ¼ inch (about a ½ centimeter.) If you're using a fresh lemon instead of bottled lemon juice this is the time to cut it
Add your veggies to a bowl with a generous amount of olive oil, dill, onion powder, lemon juice, salt, and pepper. Toss with your hands or some tongs until the veggies are thoroughly coated with oil and spices
Take your salmon and drizzle a little oil on it along with plenty of dill, onion powder, lemon juice, salt, and pepper from earlier. This is where I recommend gloves, because next step is the rub the mixture into the salmon. Make sure to get both sides.
Arrange the veggies and the salmon (skin side down) on a foil lined baking sheet and stick in the oven for ~25 minutes
It should reach 145° F (62° C) minimum.
When it's done it should look like this
